“Busiate” are a type of handmade fresh pasta, known for their characteristic spiral shape. The perfect dressing is “Trapanese Pesto”, which utilizes local resources, from local homemade oil to Nubia garlic, and from almonds to pecorino cheese. A tasty and fresh dish that offers a blend of Mediterranean flavors, suitable for vegetarians as well. All processes will be carried out manually, including the pesto, for which the typical terracotta mortar will be used.
The cooking class is designed for small groups, allowing participants to carry out all the processes and eat what they have prepared themselves. My mom Pina will run the cooking class, and I will translate into English. In addition to the actual lesson, a complete meal (lunch or dinner, depending on the agreed-upon time) is included. The dough for making busiate was rolled around the "busa" to give it the characteristic twisted shape. The perfect dressing for busiate is Trapanese Pesto, also known as Pesto all'Ericina. This dish is particularly appreciated by vegetarians and uses local products such as red garlic from Nubia (a small rural town nearby Trapani), extra-virgin olive oil, tomato, almonds, basil, and pecorino. It's a recipe suitable for all seasons, but it shines the most in spring and summer when it's easier to find fresh ingredients.
